Hot New Chef, Cool New Menu

Trey Hartinger, 26 (formerly of San Diego's Stingaree Restaurant), was recently appointed executive chef of Restaurant at The Pearl, the popular eatery, bar and lounge. This dynamic, young talent has introduced a delicious, seasonal menu of rustic, California cuisine. Chef Trey's approach is simple, straightforward and satisfying, made better through relationships with distinguished roster local farms and producers. Signature appetizers include candied pork belly with ginger bok choy and Maker's Mark sweetbreads with organic greens. Entr`highlights include Kurobuta pork chops with sourdough-boursin bread pudding, and skin-on salmon with dill-lemon cre fraiche. All culinary creations are complimented by house-made desserts, a globe-spanning list of 40-plus boutique-style wines, and a collection of signature cocktails.

Big Splash: Dive-In Theatre

Dive-In Theatre, The Pearl's flagship weekly event, is a Wednesday night "cinema social" combining eclectic film choices, food and drink and light conversation. An out-of-the box success since debuting in September 2007, the free event revolves around the hotel's poolside lounge and theater. Films are projected onto a 10' x 13' foot projection screen overlooking the hotel's vintage, oyster-shaped swimming pool. Guests are invited to "dive-in," splash around and enjoy a range of movie picks from the 2008 Spring Schedule (http://www.thepearlsd.com/events). At evening's end, it's sleepover time, courtesy of The Pearl's daily, after-midnight "Play and Stay" rate of $79 tax for any available room (reserved on-site).

Sonic Branding: Groove 24/7

Not only does The Pearl look and feel different, but it also sounds different. Sonic bliss from www.Groove247.com, the hotel's custom-produced Internet music source, surrounds the property with an eclectic, cosmopolitan soundtrack. Programmed by local DJs and selectors, Groove 24/7 is preset on the guestrooms' in-room Internet radio players, and its online orientation makes The Pearl brand experience "portable" for guests tuning in at home or work.
